- 1 white garlic, finely chopped
- 3/4 cup whole milk
- 1/3 cup heavy cream
- 3/4 cup parmesan (grated) - divided amount
- 3/4 cup Paneer Havarti (cooked) – divided
- 4 tablespoons unsalted butter (melted)
- 1 teaspoon dried nutmeg
- 3/4 cup bread crumbs
Steps for making spinach or gratin
- Cook vegetables according to package directions. Allow to cool and then strain off all the liquid.

- Preheat the oven to 375˚F and grease a baking dish.
- Heat the olive oil in a medium pan and saute the red onion for 3-4 minutes.

- Sprinkle with flour and continue mixing, mixing for 30 seconds.
- Add cooked spinach, salt, pepper, dried thyme and garlic to pan and stir until ingredients are combined.

- Mix the milk, heavy cream and half of the Parmesan and Havarti cheese into the spinach mixture. Add the nutmeg, mix gently and heat to evaporate the liquid. Pour the ingredients into the baking dish.

- In a medium bowl, whisk together the melted butter, breadcrumbs and remaining cheese. Mix well. Spread the mixture evenly over the gratin. Add olive oil on top.

- Bake for 15 minutes until hot and bubbly and the breadcrumbs are golden brown.
