This is my version of shepherd's pie. Instead of ground beef, I prefer to use beef short ribs. This makes cooking more difficult, but the end result is much more decadent. To make it easier, the beef and mash can be prepared separately in advance and put together when you're ready to put it in the oven.

- 8 boneless short ribs (about 900 g)
- 2 bay leaves
- A handful of sprigs of fresh thyme
- 6 cloves of garlic, unpeeled
- 1 medium onion, unpeeled and halved
- 1 tablespoon of whole black peppercorns
- Mashed potatoes
- 8 medium yellow potatoes, cut into 2cm pieces
- 1/4 cup cream cheese
- 1/4 cup whole milk
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground white pepper
- Finish
- 1 large onion, chopped
- 3 cloves of garlic, finely chopped
- 2 carrots, cut into cubes
- 1 tsp fresh thyme leaves
- 2 tablespoons of Worcestershire sauce
- 1/2 cup of dry red wine
- 1/2 cup split peas
- 1/2 cup sweet corn kernels
- 2 cups of beef broth
- 1 tablespoon of cornstarch
Steps for making Ribs Shepherd's Pie
- Add a little vegetable oil to a large pot over medium-high heat. Season the ribs with salt and pepper and pan-fry several times until browned on all sides. Place all the ribs in the pot with the bay leaf, thyme, garlic, onion and peppercorns. Add enough ice water to submerge the meat about 2 cm below the surface. Reduce heat to medium-low and simmer for 2 hours. Remove meat and set aside.
- Add the potatoes to a large pot of cold water. Add a good pinch of salt and raise the heat to high. Cook until the potatoes are soft.
- Drain the potatoes well and return them to the pot. Add cream cheese, milk, salt and pepper. Mash the potatoes until there are no big balls. You can also mash the potatoes through a sieve if you want them to be silkier. Take a wooden spoon and mix the puree until smooth. Do not mix too much or it will become sticky. If necessary, add milk little by little. Potatoes should dry a little. Check the seasoning and add salt and pepper if needed.
- Preheat oven to 400F. Add a little vegetable oil to a large skillet over medium heat. Add the onion and garlic and cook for 1 minute until fragrant. Add the carrot and thyme and cook for another 2 minutes. Add Worcestershire sauce and wine and cook until liquid is absorbed, about 2 minutes.
- Using a pair of forks, shred the beef. Add the beef to the pan with the peas and corn and stir. Add beef stock. In a small bowl, mix the cornstarch with 1/4 cup water to make a slurry. Add it to the pan and stir until the sauce thickens.
- Place the beef on a 20cm x 30cm baking sheet with high sides. Gently tap the tray on the counter to distribute the meat evenly. Add the potatoes and use a spatula to smooth them over the beef. Put the baking sheet open in the oven for 20 minutes. Increase the heat and cook for another 2 minutes or until the edges are crispy and the top is lightly browned.
- Remove the baking sheet from the oven and let rest for 10 minutes before slicing. Serve with freshly grated cheese (cheddar or Parmesan is good) or, my preference, a sprinkle of smoked paprika.
