- Knead on a floured surface until dough is smooth and elastic, about 8 minutes, adding more flour to prevent sticking. Spin the ball. Place in a large oiled saucepan for a good coating. Cover with a damp cloth. Let grow in a warm place for 15 minutes.
- Spray a 9-inch square pan with kitchen spray. remove dough. Pour into the prepared skillet and beat until evenly combined. Cut into 12-16 squares.
- Fill a large saucepan to 1 inch with boiling water. Put a shelf on it. Place the brioche mold on the wire wheel and cover with a damp cloth. Leave to rise for 20 minutes.
- Preheat oven to 400°F. Lightly dust the tops of the buns with flour, if desired. Bake in the oven for about 10-15 minutes when the buns touch the gaps. Place the mold on a wire rack and let cool for 10 minutes. Serve hot.
