Steps to make Carbonara from SEE !!!

  1. Pour olive oil into a large pan over medium heat, then add the pork, onion and garlic. Cook until soft, but not crispy. Remove and place in a bowl.
  2. Add shrimp, salmon and comb to the same pan. We need a nice brown color, but also a little boiled. Then place on a plate.
  3. Always the same pot. Keep the seafood juicy, add the shrimp shells and cook by squeezing lightly. 20 minutes. Prepare a liquid with a lid. Add the wine. Cook for another 10 minutes to remove the alcohol while crushing the shrimp shells for maximum flavor. Sift through a fine sieve, remove the skin. Pour the sauce back into the pan.
  4. Meanwhile, bring the brine to a boil in a large pot. Add pasta, cook al dante (slightly cooked).
  5. Sauce - reduces spice. Remove the pan from the heat to cool slightly, then add the egg yolks and beat. Then lower the heat to a minimum again and continue to whisk for about 10-15 minutes or until the sauce thickens. Periodically remove the pot from the oven to check the temperature. It should be very oily. When the mixture thickens, slowly add the butter, one cube each time and beat. Turn off the heater.
  6. Meanwhile, dry the squid rings gently with paper towels. Add the flour to the bowl and season with spices. Mix the squid rings well and remove. Shake the excess flour. Fry in a deep frying pan or shallow fryer until golden brown. Remove and dry on a kitchen towel.
  7. Drain the noodles.
  8. In a pot used for pasta over medium heat. Add mussels / peppers and wine. available coverage. Prepare for a pair. Stir gently every minute. Remove open seeds. Cover and tap. Repeat. Discard unopened seeds after 10 minutes (if frozen) or 5 minutes (if not frozen). Add 1/4 - 1/2 cup liquid to thin the sauce. Stir, taste and season as needed. Mix the parsley and onion mixture with the bacon.
  9. Add pasta and other seafood (except squid) to the sauce and mix lightly. If necessary, add more pasta juice.
  10. Pour into a large bowl and place the squid pieces on top. Grate the parmesan and sprinkle with extra parsley and lemon slices. Serve immediately.
  11. Note: If the sauce is too rich for your taste, add a teaspoon of sour cream. I also served it with crispy salmon peel and green onions.
