- 3-4g beef or vegetable stock
- 1 teaspoon ground beef (optional)

- 1-2 tablespoons chopped fresh thyme
- 1-2 bay leaves (optional)

- 5 large rusty potatoes

Instructions for making a ricotta cake

- Add chopped onion and chopped garlic to the pan where you fried the meat. Let the onion soften and fill the kitchen with the best aroma known to the cook.

- Add the flour and stir to coat. Simmer for a minute before adding the wine. Slowly start adding broth to the mixture. Add cayenne pepper (more if you like it spicy), paprika and bay leaf. Reduce the heat and simmer the mixture for 5 minutes, stirring occasionally.
- Peel and chop the potatoes. Place the diced potatoes in salted water and boil for 8-10 minutes or until the potatoes are tender, preferably when the filling begins to cook.
- Drain potatoes and add butter, sour cream and cheese. Using a potato masher, blender, hand mixer or wooden spoon, start mashing the potatoes. While filtering, add the cream little by little so that the mass is more homogeneous.
- After softening, salt and pepper.
- *Note: In my opinion, mashed potatoes are an incredibly personal thing. Everyone's recipe is different and everyone has their own preference for potatoes. Any mushroom will make you happier, but mine will always be buttery and creamy and slightly sour and ALWAYS lumpy. Life is better in uncertainty.
- Remove the ingredients from the heat and remove the bay leaf from the pulp. Preheat the oven to 410°F.
- This recipe will make two medium sized cakes or several large cookies. Fill the mold ⅔ full.
- Spread or spread the mashed potatoes in an even layer over the filling. Drizzle with a little olive oil. Bake for 20 to 25 minutes or until golden brown. If you want a crispier/darker color than the potatoes, cook for 2-3 minutes.
