- Honey mustard sauce
- 1 large shallot (chopped)
- 5 cloves of garlic (chopped)
- 3 tablespoons of whole grain Dijon mustard
- 3 tablespoons of honey
- 1/4 cup apple cider vinegar
- 2 tablespoons of sherry vinegar
- 1/2 cup olive oil
- 1/2 cup grape seed oil
- Kosher salt and freshly ground black pepper (to taste)

- 12 oz Double 8 Cattle Company Fullblood Wagyu Beef Bacon (Cooked)
- 2 cups cherry tomatoes (cut in half lengthwise)
- 1 shallot (cut into thin strips)
- 4 oz grated Parmesan
How to make a slice of honey-mustard marinated steak salad.
- PREPARATION OF MARINADE AND DRESSING In a blender, combine chopped onion, minced garlic, Dijon mustard, honey, apple cider vinegar and sherry vinegar. Mix until smooth. With the blender still on, slowly add the olive oil and grapeseed oil until the mixture is combined and smooth. Season to taste with kosher salt and freshly ground black pepper. These are spices. Place the Wagyu Fullblood fillets in a 1-gallon Ziploc bag.
- Pour half of the marinade over the steak (in the Ziploc bag). Apply the marinade to the steak and place the bag in the refrigerator for 12-24 hours. Fill the other half with marinade and put it in the refrigerator. This will be a salad dressing. Remove the Fullblood Wagyu sirloin steak from the refrigerator 1 hour before cooking. Drain the marinade and let the steak rest at room temperature.
- PREPARATION WAGYU BEEF WHOLE BLOOD BACON Heat a large skillet with 1 tablespoon grapeseed oil. Cook up crispy whole blood Wagyu beef. Pour the fat into a small bowl and let cool. Once the fat has cooled to lukewarm (and is no longer hot), take 1/4 cup of the bacon fat and mix it with the gravy you refrigerated earlier.
- PREPARATION WAGU FULL BLOOD STEAK TIP Preheat the grill to high and clean the grates with a grill brush. Allow the grill to preheat for 10 minutes. Place the marinated sirloin steak on the grill. Fry the steaks for 3-4 minutes on each side (fry more or less depending on how well done you want them). Let the steak rest for 10 minutes.
- LAST STEP Combine all spinach salad ingredients (baby spinach, cooked whole blood Wagyu beef, cherry tomatoes, shallots, and Parmesan cheese) in a large bowl. Drizzle the honey mustard dressing over the salad. Season to taste with kosher salt and freshly ground black pepper. Cut the steak against the grain. Place the steak slices on top of the vegetables. - Note. Alternatively, you can put spinach on a plate with other salad ingredients. Then add the Fullblood Wagyu Entrecôte to the salad and dress with the honey mustard vinaigrette dressing.
